Best Taco Dinner

Hubby made the best taco dinner for us last night. We also had Rice a roni Spanish rice too, yummy! He loves cooking like me. He cooks for us once in a while. We have slowly but surely learned how to eat the good food he made for us. I was his assistant cook last night. I sliced some of the vegetables and spices. Here are the ingredients:

1 lb ground beef
1 pack taco seasoning
a box of taco shells
1 pc tomatoes diced
1/2 onion bulb cut into thin wedges
lettuce cut into strips
1 pc jalopeno sliced
1/2 cup sharp cheddar cheese shredded

Cooking Directions:
1. Wash the ground beef thoroughly using a colander.
2. Heat a pan and place the ground beef.
3. Fry the ground beef with its own oil then drain the oil.
4. Sprinkle the taco seasoning, mix until done.
5. Arrange the ground beef in the taco shell.
6. Place the lettuce, tomatoes, onions, jalopeno and cheese.
7. Serve with a smile!

Seafood Fried Rice

I love to make fried rice on weekends sometimes. This post might be a little late but I would be happy to share it with you. Last Saturday I made seafood fried rice. I used my leftover rice to make fried rice since we ate out on Friday nights. I just basically sauteed chopped onions, garlic and red pepper then fried shrimps and and handpicked crab meat. I sprinkled it with salt and pepper the garnished it spring onions. Then it was good to go! Yummy!!!;-)

Mexican Food

We usually go out and eat on Fridays. Last Friday's food trip was authentic Mexican food so we went to the restaurant called On the Border. I'm sure you are familiar with that one. They are famous with mexican grilled food. My stepson surprisingly went with us on our Friday Food Trip. He usually is contented with Chick Fil- A or Wendy's. He can't simply resist his favorite food. It was pouring but we didn't mind it. I like the restaurant's ambiance first of all. The kids loved it too. We loved their bottomless super big chips and spicy salsa. I ordered bacon wrapped shrimps and steak medallion ( tender carne asada medallion steak). It was tender steak with unique flavor to it. It came with sweet corn and corn bread. The corn bread had a hint of jalopeno in it. It was so yummy. I got an excellent choice of dinner. Hubby go spicy fajitas and my stepson got tacos. We enjoyed dinner there. I hope we will go back there soon. I'm beginning to love mexican food.

Beef Soup

I have two kids who loves to eat rice with soup more often than you can imagine. My kids love soup so I often find myself creating some soup dishes that my mom used to make for us. For dinner today I made soup out of beef bones. It smelled and tasted so good that my daughter ate more rice with it. My son loved the veges and the beef since it was already very soft. Here's the recipe for you to enjoy-


1 lb beef bones
1 onions bulb (chopped)
spring onions
red pepper
carrots (in big cubes)
potatoes (in big cubes)
hot peppers (optional)
4 cups water
2 tbs canola oil
1/2 tsp of salt
a dash of pepper

Cooking Directions:
1. Wash the beef bones thoroughly and sprinkle 1/4 tsp of salt.
2. Boil 4 cups of water in a pot then place the beef bones for 30 minutes .
3. Place ginger and potatoes then bring to boil.
3. When potatoes are cooked set in low fire and place the carrots, hot peppers and

5. Place the spring onions then season with salt and pepper to taste. Serve hot!

Mussel Soup

Saturdays and Sundays are usually the days devoted to market day/grocery shopping for us. Hubby noticed that we ran out of rice so we really have to go to the asian store. We went to H Mart(an asian store) yesterday. We found so many kinds of asian foods name it they have kind of place. We bought a milkfish (whole), two mackerel (whole) and mussels. We tasted the Korean melon and it was good so we bought some too. We bought ripe papaya and dinosaur peaches( I thought those peaches looked funny). We bought a 25-lb sack of rice, some filipino type of bread called pan de sal and ensaymada espesyal. Yummy. We also bought sardines (kay nakalugsong man!;-). It so happened that my daughter loves the sauce in it and not the fish. And we bought a lot more other stuff for cooking. And she requested not to forget the noodles she loves- pancit canton!

When we arrived home it was time to make dinner. So I made soup with the mussels I bought and fried some fresh mackerel fish. Hubby put the leftover ground beef in the soup and good thing they tasted fine. I did know why but fine he wanted to use the extra ground beef. I cut and sprinkled a dash of salt to my mackerel then cook some rice. I also fried some anchovies and placed some vinegar and soy sauce on it. It tasted divine that even my kids begged to make some more. I told them we make some every meal and not all at once. Hubby ate the hot pepper I placed in the soup and he was sweating like a horse. I tasted some of it and it was really good. Do you want to know how I made my mussel soup? It's this simple:

a pound of fresh mussels (on the shell)
3 cups water
onion bulbs
spring onions sliced
2-3 long hot peppers
red peppers sliced
tomato sliced
salt and pepper
sweet potato tops/ ongchoy(kangkong) optional
lemon grass optional

What to do:
1. Boil 3 cups water then place the mussels.
2. Bring to boil one moe time and the put all the spices except the spring onions.
3. Season with salt and pepper to taste.
4. Put the spring onions and serve!
See? it's easy as 1,2,3.;-)

Singapore Restaurant

We went to the Singapore Restaurant for dinner last night. Hubby and I really love this restaurant off in Route 73. They have japanese sushi, singaporian and thai cuisine. It makes me feel like I'm home away from home in this exotic place. We ordered california roll, chicken satay, chicken fried rice, singaporian rice noodles and pad thai. Everything we ate was excellent to my pallete. I wonder what's their secret in making these food ohhh sooo goood!
